RUM EXPERIENCE TOUR


Step behind the scenes at St. Nicholas Abbey and discover how rum is crafted using traditional methods that date back more than 350 years. Led by Owner and Master Distiller Larry Warren, this immersive experience takes visitors from the historic steam mill to the distillery “Annabelle,” where you can see rum bubbling in the pot still and learn the craft behind its rich island character.

During the cane harvest season — typically from the second week of January through the end of June — visitors may also witness the impressive steam-powered sugar cane mill (c.1890) in operation, crushing freshly cut cane to produce the syrup used in the distillation process.

TOUR SCHEDULE

  • 11am – Arrival at the Heritage Railway station
  • 11:30am – Departure of the steam train through the plantation
  • 12:15pm – Disembark at the Great House for a 30-minute guided heritage tour and viewing of a 1930s home movie depicting life on the plantation
  • 12:45pm – Live music on the Terrace and an opportunity to enjoy lunch at the Terrace Café (lunch not included)
  • 2pmRum Experience Tour, including:
    • Personal guided tour of the distillery and steam mill (c.1890) with Larry Warren, Owner and Distiller
    • See rum bubbling in the pot still “Annabelle”
    • Learn about the history of rum production at St. Nicholas Abbey
    • Official tasting of unique single-cask rums — White, 5YR, 8YR and 12YR — along with sugar cane syrup
    • Complimentary miniature 5YR St. Nicholas Abbey Rum
  • 3:30pm – Opportunity to return to the Terrace Café and Gift Shop

RUM PRODUCTION

St. Nicholas Abbey is one of only four independent distilleries in Barbados. The Warren family restored the plantation’s distillery as part of the estate’s ongoing revival, focusing on traditional small-batch production rather than industrial methods.

Rum is produced from estate-grown sugar cane, harvested by hand and pressed once in the steam mill to extract fresh juice. The juice is reduced to cane syrup in a vacuum evaporator, allowing production to continue throughout the year despite the short Barbados harvest season (mid January-June).

Fermentation and distillation take place in the copper pot still “Annabelle,” producing a clean, characterful spirit that reflects the heritage of Barbadian rum.

AGING & BOTTLING

After distillation, the rum matures in bourbon oak barrels in the plantation’s rum bond, where cooling trade winds help shape its smooth, complex character.

Each rum is hand-bottled straight from the cask, without colouring or additives. Elegant glass decanters are engraved with the Great House and finished with mahogany-capped corks and individually numbered labels.
