Fruit-to-Scoop Culinary Experience
By Rekke Editorial

A Passion for Local Fruits & Culture; Growing up in the countryside of St. Philip, Leandra was always surrounded by the most amazing local fruits. She remembers picking sugar apples from Aunt Ry’s tree, visiting my Uncle Archie’s orchard to see which fruits he had growing, and Auntie Erla’s golden apple tree was another favourite spot. She also recalls her father making fresh juices from Bajan cherry and golden apples for her and her sister. Special memories which shaped the way she sees the local fruits, not just as food, but as a part of her home island’s culture and heritage. These memories were the inspiration for Cool Comfortz, to share these flavours with others, so they can experience a true taste of Barbados and feel connected to the same fruits that have always been a part of her life.
Cool Comfortz Frozen Delights,A Labour of Love, Passion and Local Flavour, was born in 2011, when Leandra had the unforgettable experience of tasting golden apple and soursop sorbets for the first time while visiting Martinique and wondered, “Why aren’t we doing this in Barbados? Our local fruits are just as amazing!” That single moment sparked something in her, and with my mother's support, launched Cool Comfortz.
Ten years later, following the pandemic, realizing the constant grind of manufacturing and pop-up events and farmers’ markets was proving to be too arduous, an idea she’d been nurturing resurfaced: To offer an immersive culinary experience. No longer to just make and sell sorbets, rather to share the rich stories behind Barbados’ fruits, explore the island’s culture, and connect people to the very essence of local produce.
This has been a challenging journey. From learning how to run a business to managing staff, navigating manufacturing, and creating recipes—all while being completely self-taught, a path full of trial and error. Every mistake a lesson, every setback she grew more resilient, and every sorbet perfected became a reflection of the growth and passion put into Cool Comfortz.
Introducing:
The Barbados Fruit-to-Scoop Culinary Experience
Where you are invited to step into her cozy home, for a hands-on journey that goes beyond food. This experience isn’t just about making sorbet; it’s about connecting with the fruits, hearing their stories, and understanding how they’re woven into the culture of Barbados. As you create and enjoy our one-of-a-kind Bajan sorbets, you’ll experience the island in a way only a local can show you.
This 3-hour, hands-on fruit tasting and sorbet-making experience is for intimate, small-group sessions (6 persons max), where you’ll work together to explore seasonal fruits and actively transform them into a sorbet with guided support every step of the way.
You’ll enjoy a tasting of house-made, signature sorbet flavours during the experience and leave with a small take-home container of the sorbet you helped create.

1. Welcome
From the moment you arrive, you’ll be welcomed into Leandra’s home. She’s a local Barbadian and your host. It's a relaxing and inviting space where you can settle in and enjoy a refreshing local drink while everyone arrives.
Once the experience begins, Leandra will formally greet you, share a little about the story behind Cool Comfortz, and give a brief overview of how the experience will unfold. This includes a short round of introductions before moving on to the next part of the Fruit-to-Scoop experience.

2. Fruit Discovery & Tasting
This is where we start with the fruits themselves.
We’ll talk through some of the fruits you’ll find in Barbados and how they’re enjoyed locally. Then, you'll see a curated selection of fresh in-season fruits for you to explore. Some may be familiar, others completely new.
We’ll taste them together, chat about what you notice, what you like (or don’t like!), and what surprises you. There’s no right or wrong. It’s all about discovering the fruits before we turn them into something special later on.

3. Hands-on Sorbet Making
Now it’s time to get hands-on with the fruits. Under Leandra’s guidance, you will work together as a group to prepare the fruits for the sorbet; peeling, scooping or removing seeds....whatever the fruit needs and mixing them into the base for your frozen treat. Each fruit has its own little step, so everyone gets involved in the process.
Leandra will explain what each ingredient brings to the sorbet and guide the group through each step, so the sorbet comes together smoothly. At the end, you’ll get to taste a little of the mixture before it goes into the ice cream maker.

4. Curated Sorbet Tasting
After all the hands-on work, it’s time to enjoy the fruits in a whole new way. You’ll be served a curated tasting of four house-made sorbets, each one featuring a different local fruit. Some sorbets might be from fruits tasted earlier in the experience and some might surprise you with new flavours.
As you taste each one, you can notice the differences, see which you like best, and have fun comparing the flavours with the group and Leandra. It’s a simple, delicious way to celebrate the flavours of Barbados before we move on to the next part of the experience.
5. Interactive Fruit Game
After tasting the sorbets, it’s time for a bit of fun with a fruit-themed game. Don’t worry though it’s totally relaxed and no-pressure. You’ll get to put your new fruit knowledge to the test in a fun playful way. Everyone gets involved and laughs are guaranteed.
6. Wrapping Up
As the experience comes to an end, you’ll take home the pint of sorbet you helped create during the workshop. It’s a little reminder of the day, something you can enjoy later or share with friends.
As you say your goodbyes and head off, you will leave with the memories of a really unique taste of Barbados.
